Recipe for mini muffins please??

Many moons ago I bought a Prestige 12 hole mini muffin tin which came with a recipe to make the correct quanity of mix. Of course I have lost the recipe haven't I?
Does anyone have the same tin and still have the recipe please? They really were just the right size as they could all be eaten fresh.

The recipe i have actually makes 24.....mainly because i usually batch bake.
Here it is anyway:
7 oz plain flour
2 tsp baking powder
2 oz soft light brown sugar
1/4 pint milk
1 egg, beaten
2 oz butter/margarine, melted
2 oz glace cherries
2 oz dried apricots
1/2 tsp vanilla essence
1. Heat oven to Gas 7 Elec 220 C/425 F and place paper cases in tins.
2. Place flour,baking powder and sugar in a bowl and add milk, egg and melted butter/margarine. Stir thoroughly until mixture is smooth.
3. Chop cherries and apricots and stir into the mixture with the vanilla essence.
4. Spoon into cases until they are about 3/4 full. Cook for 10-12 mins until well risen & browned.
Suitable for freezing if any of them make it that far!:rotfl:

Thanks, these look good. I've also found a few recipes for 24s on t'internet but I was really hoping that someone could come up with the quantities for just 12.

Hi stilernin,
Here's my muffin recipe. It makes 10-12 muffins.
2 cups plain flour
1 tablespoon of baking powder
1 teaspoon of salt
½ cup brown sugar
1/2 cup sugar
2/3 cup of chocolate chips or what ever fruit
1 egg
¼ cup of sunflower oil
1 cup of milk
Preheat oven to 200 degrees. I use the cup from my breadmaker for measuring. If using fruit or choc chips, coat them in flour as this helps to stop them sinking.
Mix dry ingredients and wet ingredients separately. Add wet to dry and mix. Quickly add to muffin cases and cook in the oven, makes 10-12 muffins.

Yup, I thought that too.......... but I'm sure that with the original recipe I had, I didn't have to halve the egg!!
I've tried to find a website for Prestige bakeware, either manufacturers or distributors, but no luck unfortunately.0 -
