Need ideas for healthy lunches can make on a Sun eve for Mon - Thu that won't go off

Not sure if this is the right place to post this... I had a look and I couldn’t see any threads on this topic so apologies if there is one already.
I was wondering if anyone has any ideas for healthy lunches I could make on a Sunday evening which would last for Monday, Tuesday, Wednesday and Thursday to take to work. This is mainly due to laziness in that when I get home from work, I can’t be bothered to make lunch for the next day so usually just bung a load of unhealthy convenience food (crisps, chocolate etc) together, but also as it will save money and time hopefully. On a Monday and Tuesday I’m at work for 10 hours & 40 minutes, Wednesday 8 hours & 20 minutes and Thursday 9 hours so I’d need some snacks and “lunch”. At work I have access to a fridge and a kettle. I know I could make sandwiches and then freeze these and defrost over night or during the day but I find bread makes me bloated

If you really are unable to spend a few minutes preping lunch for the next day, did you know that you can freeze sandwiches so could make up a whole weeks worth on Sunday:

Got a microwave at work? My OH does so I make extra of any suitable main meals and then freeze lunch sized portions in recycled takeaway containers. He takes one out the freezer in the morning and it's half defrosted by lunchtime, then he just heats it up. Works for leftovers too.Val.0

What about samosas or pasties? Otherwise, you have couscous that can be added to fried onion, peas, kidney beans, minced lamb, peppers etc and this will keep in the fridge for 3-4 days. Pasta or rice salads? Sausage rolls and quiches with some side salad. Yogurts, nuts and fruit? Banana chips? How about making a tortilla type omelette. These keep well in the fridge and have the advantage of letting you use up all the odds and ends you have left in the fridge. You never make the same one twice so you don't get bored with them. Have it with a salad and you have a nice substantial and healthy meal. Hope this helps, Cheers Lyn.0

Thanks everyone. So cous cous, pasta or rice would keep in the fridge for 4 days? To then eat cold as I don't have a microwave at work? I'd heard rice wasn't very good to keep for too long.0

How about spending £30 yourself or with work colleagues to buy a microwave for work?
I know coucous and pasta can be eaten cold, rice must be the same though as some ready made salads have rice in them.
I think coucous, pasta and rice should all be fine for 4 days in the fridge (but i know hardly anything about cooking).
Change the type of bread you use? If you are ok with pasta then bread should be ok?
Snacks - greek style yoghurt with fresh fruit. Fruit by itself, seeds, nuts, rye bread or ryvita etc. with some toppings. You could keep all this stuff in your desk drawer if you have a desk drawer.0 -
