I would say fruit cake from the Dairy cookbook (basically 8oz SR flour, 4oz sugar, 4oz fat, 1 egg, fruit and any spice you like, rub fat into flour, add sugar, egg and a little milk). You can bake this in a loaf tin or round tin.
Coffee cake - victoria sponge with a tsp coffee dissolved in a little boiling water. make a butter cream flavoured with coffee for the top (or middle).
Victoria sponge mix, when cool coat the top with raspberry jam and sprinkle generously with coconut.
Individual cakes, butterfly, fruit, jam & coconut, topped with melted chocolate, iced with a swirl of coloured/flavoured butter cream.
Banana cake or muffins.0 -
Hello, I have done a sponge with lemon curd and whipped cream, twinks, millionaires shortbread and Paul Hollywoods iced fingers, they went down a storm. Did this for my last day before being made redundant. Happy baking!!0

Nothing wrong with rice crispy cakes but if you feel a need to make them a bit more "adult" use dark chocolate and add chilli flakes/powder to the mix (up to you if you tell people before they try them).0 -
How about a Tea Loaf?
Earl Grey Tea Bread
9oz Mixed Fruit
7 fl oz Strong Earl Grey Tea
2 tablespoons clear honey/brown sugar
1 large egg beaten
2 teaspoons Baking Powder
9oz Wholemeal Flour
1oz Soft Margarine
Soak the fruit in the tea overnight. Next day, combine all the ingredients and mix well. Grease a 2lb Loaf Tin . Put mix in and bake for 45/60 minutes at Gas Mk4/180 deg C/ 160 deg Fan/350 deg F.
