It's a very simple basic ice cream. I've not actually done vanilla yet, but was planning on just mixing in a "pods-worth" of vanilla seeds.

    ICE CREAM

    Makes approx. 750ml

    INGREDIENTS

    400g tin of condensed milk
    300ml carton of double cream

    METHOD

Put the ingredients into a bowl. Whip until it resembles clotted cream,

Gently stir in any flavouring (see below).

Put the contents into a shallow dish. Put the dish in the freezer.

Every hour or so, move the frozen bits from the edge of the dish into the middle. After about 4 hours, it should all be frozen.

    ADDITIONS & ALTERATIONS

For coconut ice cream, substitute a 400ml tin of coconut milk for the double cream. Mix thoroughly.

For Malteser ice cream, add a small bag of Maltesers. Put it in the freezer until they are frozen and brittle. Make a small hole in the bag. With a rolling pin or any other blunt object, hit the bag until the Maltesers are completely broken up. Stir in the Malteser bits before freezing or scatter them over the top after serving.

For peanut ice cream, add half a jar of crunchy peanut butter. For “Snickers” ice cream, top with caramel and chocolate ice cream sauces.

For raspberry or strawberry ice cream, add a punnet of raspberries or strawberries. Liquidise most, chop some. For raspberry ripple, don’t stir them in completely.
The acquisition of wealth is no longer the driving force in my life. :)

A simpler idea is to store the vanilla pods in sugar until you need them so you get vanilla sugar as well.

Have a look out for Ndali Finest Fairtrade Vanilla Pods (2 per pack - 30g) currently £4.29 (£14.30/100g) at Tesco. As they are 30g these should/might work out cheaper than the above. These are not often on offer however, last time they were was last November.

Not sure if Sainsbury's Taste the Difference Fairtrade Madagascan Vanilla Pods are the same per gram, same price though at £4.29.

The two for one offer above works out £50/100g.

I don't buy vanilla at the extortionate price Tesco et al charge. Try these http://www.vanillamart.co.uk/
They are excellent, the pods are wonderful and a fraction of the price really!

  • Just bought some!
  • I get my vanilla pods from eBay. Much cheaper.
