sponge pudding for 80 people

Any tips on what size/type/number of dishes to use to make 80 portions of sponge pudding?

you could use the big bacofoil trays sold in supermarkets to roast turkeys in, probably need 3 or 4 depending on the portion size.Cats don't have owners - they have staff!!DFW Long Hauler Supporter No 1500

I use a large roasting tin to make 20 generous portions. I actually make 3 tins worth for between 65 and 70 people as I find not everyone has dessert and some people only have small portions. I use 9 eggs and 500g of margarine, sugar and 550g SR flour plus a splash of milk (the eggs I get are large ones) and whatever flavouring I want. I can't say exactly how long they take as I just check, I bake on gas 5 or 170C.
One of my favourite variations at the moment is to add a jar of mincemeat (I've got loads from when Sainsbugs was selling them very cheap) and bake as normal.
I also find Bread and butter pudding works well in big trays. Again I've been using mincemeat instead of dried fruit.
Fruit salad is always popular but time consuming on that sort of scale and it can be quite expensive. I normally serve a choice of single cream or greek yoghurt with it.
If you can give me some more info about what the occassion is and who its for (ages etc) I can probably give you some more ideas.I was off to conquer the world but I got distracted by something sparkly
