tomatoes, courgettes, basil - Soup?

Day before payday and I'm away for work for a few days. have to stock up the fridge with easy eats before I go to stop daughters living on toast and potato smileys.... Trying to avoid a supermarket shop as I will just overspend.
I have two tins of tomatoes, two courgettes, onions, garlic and a pot of basil (and one of chives). Can I make soup from this? Also got some carrots but no coriander or I'd have made soup from that - the girls could live on that!
Because I'm now an OS wannabee I also have assorted dried herbs, stock cubes etc.
any suggestions welcomed!

Hi cazziebo,
You definitely can make soup from what you have. I know because this is what I'm making for tea tonight: Delia's Minestrone Soup.
You don't need to use macaroni (any pasta shapes will do) and if you don't have leeks just add a little more onion and I always replace the cabbage with courgettes.....just adapt the recipe to suit what you have. It makes a really hearty soup and my kids love it. Grated cheddar works just as well if you don't have any parmesan.

soup's a good idea - I generally just chuck all veg together with stock, herbs etc and wizz it up when cooked.
you could try a ratatouille (sp?) also.Monthly Food Budget: out of the window0 -
You can make carrot soup without coriander0

What about using the veg to make a pasta sauce?0

Carrot soup with cumin instead of coriander works really well.0

Made the soup and it is gorgeous! yum! Hope there's some left when I get back on Friday.
Also made some yoghurt bread - recipe is on here (just flour, baking powder, yoghurt and water - had all that in the cupboard) and added some chives and caraway seeds and miracle of miracles - it turned out great.
thank you everyone - a super meal full of nutrients/antioxidants with no extra spending!0
