Hi there all

As many of you know time in the power household is at an all time premium and I need to cook easily & quickly. Ive never bewen really that bothered about quick food, liking to take my time in the kitchen, alas that time has now disappeared!

Ive done our plan for the week, and Im thinking about next weeks plan

Ive got a couple of things Im not sure what to do with

1) pack of emmental cheese
2) pack of gorgonzola cheese
3) 3/4 bag frozen spinach

Im loathe to put them all together OH cant really eat too much cheese ( we got this free!)

I did feta & spinach crowns which were Ok the other day hence the purchase of the spinach- but not sure what else to do, they were quick but not quick enough :o

Anyone any thoughts?

    a spinach and cheese ommelette springs to mind, nice easy tasty and quick :D
    proper prior planning prevents !!!!!! poor performance! :p

    I make cous cous salads to take to work with us. I sprinkle walnut and a little chopped silton on the top - you could probably do the same with the gorgonzola?

    I make up the cous cous the night before (cous cous in a bowl with some dried corriander and pour over boullion stock and leave to swell up and when cool pop into the fridge). Next day - cous cous in the bottom of the tub, some chopped up tomato, pepper and mushrooms. Then sprinkle some walnuts and cheese over. I take a dressing made up of yoghurt with a teaspoon of mustard stirred through.

    No cooking and I adapt to what ever we have in the house and fridge. I've substituted the walnuts with pumpkin seeds on occasion.

    Could you please post the recipe for feta and spinach crowns, they sound delicious.
    What about a raclette? You don't need a raclette machine, just use your grill; sliced potatoes, all manner of fillings, meats, etc., use either the potato or meat as your base, top with what you want and then use cheese on top (OH doesn't have to) and then have another go with different toppings, etc. It's really good fun. Okay, it is better to have a raclette machine but then I've only ever done one raclette, in Switzerland, so that doesn't justify buying a machine. The next time I do it I'm going to try it under the grill.
    Sorry if the explanation isn't very clear, have just surfaced after 5 days in bed with acute tonsillitis, I never thought it could be so nasty!!!!
    The idea of a raclette is that everyone at the table joins in and has a small raclette dish, a bit like a square spoon, which they fill and then pop under the grill of the raclette machine at the same time. Much wine is drunk, etc., etc.

    Oh spinach & feta crowns are easy :D

    get a pack of puff pastry (I cant make my own , Ive given up trying on that one!) and roll it out

    cut into squares- put on baking sheet

    crumble a packet of feta into a bowl

    take a few handfuls of spinach I put this in a pan of warm water to defrost, then squeezed out all the water with my hands

    crush a clove of garlic

    mix spinach, feta & garlic & som grinds of black pepper in the bowl

    put dollop of filling in middle of each square & pince up the sides

    wack in oven for about 20 mins on 200

    Serve & Scoff!

  • If I had the time I would make gnocchi with the spinach and bread and melt the gorgonzola with some butter as a sauce. Naughty but nice!

    how about making a lasagna and using the spinach instead of lasagne sheets? then using some of the cheese as a topping for it?

    i made a fab broccoli, caramellsed onion and gorgonzola quiche the other day yummy!!

    And on the same lines - quiche?

    Or grate & freeze the cheese and use it 'later' - when you want to!

    Spinach? Make up a Sag Aloo and eat with rice?

    Hmmmmmmmm - will come back if I think of more.

    on a slightly different note what about juicing your spionach-my fav is broccoli,spinach and pear or apple.dont knock it till you have tried it its delicious.the cheese id have as a toastie or as roasted cheese-ie melted under the grill,for lunches
