Sorry if it's not clear.
You use the whole egg.If you crack open an egg and put it in a bowl,around the edge of the yolk you can see two areas on opposite ends where there's a white stringy bit in a clear jelly.These are the balancers and they won't cook when you make the lemon curd.So it's best the remove them because they're not nice in the mouth IYSWIM.They remain stringy!
You can cut them off or lightly beat the egg and strain them through a sieve.
