  • I don't know if you have any bicarb of soda or butter/marg but here's a recipe for eggless steamed sponge pudding - you could ad banana or serve it with sliced bananas?

    INGREDIENTS:

    6 oz self-raising flour
    2 oz margarine
    1 1/2 oz sugar
    1 tbsp golden syrup)
    1/2 tsp bicarbonate of soda
    1 tsp vinegar
    Milk to mix

    METHOD:

Sift the flour and rub in the margarine until fully incorporated. Stir in the sugar and golden syrup. Blend the bicarbonate of soda with the vinegar and add to the other ingredients with enough milk to make it sticky. Put a tablespoon of jam or golden syrup into the bottom of a greased 1 litre pudding basin and add the sponge mix, leaving room for it to rise. Cover with a plate or greased paper (I used the paper butter wrapper in true ‘use it up’ fashion) and steam for 1 1/2 hours until firm.
If you lend someone £20 and never see them again, it was probably £20 well spent...

Egg-free pancakes, you could omit the raisins and thin the batter with a little more water, as per the comment suggestion and make thin pancakes that you could fold over bananas and then drizzle with syrup?

you could also make banana fritters by making the flour and milk into a thick batter - coating chunks of bananas in flour then dipping them in the batter and deep frying. you could then either sprinkle sugar on them or drizzle some of the golden syrup over them.

ps - if you had some fizzy water it would make a lighter crisper batter than the milk would.
