Lamb fat

I cooked a joint of lamb in the slow cooker at the weekend. It's now portioned up & frozen as is the stock.
I'm left with a slab of fat off the top of the stock.
Found a few pages on lamb stock but not much mention of the fat so if anyone has suggestions on good ways to use it the'll be much appreciated. Already got roast potatoes as a possibility but don't have them much.
I'm trying to find out how long the fat can be stored in the fridge or freezer. Google's let me down on this one so I'm hoping the good folk of Old Style can advise.

you can use it in your yorkshire pudding tin instead of oil to give a nice flavour.0

it keeps as long as any other fat in the fridge - use it for roast potatoes or just as you would beef dripping.0

I find the best roast potatoes are made from lamb fat - I tend to keep the fat over in a cup in the fridge and use it separately for the roastiesCat, Dogs and the Horses are our fag and beer money
