Hello everyone,
I didn't see a thread for this week, please merge if I have missed it!
Had my mum here for the last two weeks, she is very hard to feed (vegan and allergic to nearly everything, doesn't like spicy or sweet!) so meals have been chaotic. Back on the wagon today. Just me and roommie over the weekend, OH back from overseas on Monday.
have been having real trouble getting enough veg in my diet - Ugandan food (which I have for lunch every day) is almost 100% carbs. Trying to always get fruit for brekie but really focusing on veg at tea time this week.
Tonight: veg frittata with cucumber and ricotta salad
Saturday: veg cheats satay with stir fry veg and noodles
Sunday: l/o frittata and make pita dough fixings for monday
Monday: attempting HM pita for the first time - will make falafel, hummus and tsaziki to go along
Tuesday: spiced carrot and lenti soup, then roasted veg lasagne
Wednesday: l/o lasagne
Thursday: l/o soup with crusty bread

Hey-good timing, I just finished up my mealplan for the month (yeah right, as if we will stick to that! :rotfl: )
But here is the 1st week
Sun july 29 roast chicken, carrots, peas and potatoes
Mo july 30 chicken, pancetta, mushroom and spinach pasta
Tu july 31 chicken, chorizo and broad bean rice
We aug 1 smoked cod/haddock (have both fish in the freezer, so it depends which one I find in the depths first!) florentine, crushed new spuds
Th aug 2 spaghetti carbonara with peas
Fr aug 3 chicken piri piri with rice (waitrose pre-prepared meal, I'll be working late)
Sa aug 4 greek lamb chops, tomato, feta & onion salad, corn on the cob
Everything on this, I have in the freezer, or the fridge, or the garden bar sweet onions to have in the tomato, feta and onion salad, and spuds for the roast (if I can persuade OH to forgo roasts I have new spuds in the pots!)0
