Homemade bread

Options
Have bought a 125g packet of Doves Quick Yeast.

Am not sure what the difference is between different types of yeast... It's dried, and in a packet. That's all I can gather!

Any tried and tested handmade bread recipes I can play with?:)

Suggestions appreciated. :)

    That's the yeast I use. Use 1 tsp to 1½ lbs of flour.

    Basic Bread

    Makes 2x 2lb loaves

    3lbs bread flour (all white or half white and half wholemeal - all wholemeal is quite heavy - add another tsp of yeast)

    2 tsp yeast
    2 tsp salt
    2 tsp sugar
    1½ pints of hand-hot water

    Mix dry ingredients in a large bowl.
    Add water.
    Mix until a dough forms.
    Tip the dough onto a floured surface and knead for about 4 minutes and the dough is smooth and elastic. You may need to add more flour if it is sticky.

    Put it back in a bowl, cover with a damp teatowel. Leave to rise at room temperature for 2 hours.

    Knock the air out of the dough by punching it down. Give the dough a quick knead and divide into 2.

    Either place in greased 2lb loaf tins, or shape into rounds and place on a greased baking sheet.
    Leave, covered again, for about 40 mins to prove. The dough should rise above the tins.

    Bake at 220 C for 40 mins.

    I usually make 1½ times this amount and use 4 tins - slighlty smaller loaves, but they go further and make better shaped sandwiches ;)
    Granary type flours work well too.

    alternatively, I bet there is a recipe and full instructions on the packet. You could always try that.
