Question for all you great cooks - how does one cook steak?? Ive only recently started eating meat after a lifetime of vegetarianism, so am playing catch up!
I'm looking for recipes on-line but they seem to differ massively - any favourites to pass along?Mortgage free by 30:eek:: £28,000/£100,000Debt free as of 1 October, 2010

We do ours very simply on our griddle pan (medium-rare when we've bought it from the butchers) 2-3 mins on each side. It was to be red hot and smoking before you put the steak on...and only flip it once.:)"More people would learn from their mistakes if they weren't so busy denying them." - Harold J. I like rump steak, or rib eye. Ideally about 2cm thick. Let it come to room temperature before you cook it (30-60minutes depending on how big a bit it is)
I like my steak RARE (I only buy good steak, from a butcher, that has been properly hung, not supermarket stuff, which I find tough, even if a premium one)
Heat a frying pan, cast iron griddle, BBQ until VERY hot. Rub steak with oil, season with salt and pepper.
Put steak on pan, press down, and leave it. For 60-90 seconds. Flip it, and do the same. (see here for ways to test with the feel However-the pics are misleading-it is the fleshy part on your palm that you are feeling, not the top of your hand)
Remove from pan, rest for 5 minutes (i deglaze the pan with some red wine, or sherry, bubble it down, then pour over the steak) I also use this 5 minutes to boil my green beans, and serve up my dauphinoise (creatures of habit when we have steak, it is only about every 2-3months though!)
If you like it more done than rare, an extra 15-30s will give you medium rare, and 30-60s medium. I refuse to believe people like a good steak well done0
