Summer recipe for stewed apples

Hi all
Wonder if anyone has any bright ideas...
I have loads of frozen stewed apples in my freezer left over from autumn and I really want to use some up as I need the space! Also having quite a light dinner tonight, so fancy a little dessert with it.
I'd usually make a crumble or a pie but these seem like cold weather desserts to me.
Does anyone have any suggestions or recipes that I could make that aren't as heavy/wintery as crumble? I also have blueberries and raspberries which could be involved.
I don't have any ice cream and OH wouldn't eat stewed apple on its own so it needs to be used in something.

Set the apples in lemon jelly.
Whisk up egg whites plus a little sugar till stiff and fold into apples. Chill.
Mix thoroughly with cold custard, chill and serve with shortbread.
Heap into a flan case and top with whipped cream.I believe that friends are quiet angels

You could make an Apple Trifle. Slice up some cake, I have used anything I have in all except fruit cake, so sponge, swiss roll etc. and put it in the bottom of the bowl. If you like a bit of alcohol sprinkle this on the cake. Put your stewed apple on top of this and cover it with clingfilm and let it sit for an hour. You can put on top cold custard, greek yoghurt, whipped cream or a mixture of any of these and some grated chocolate. Chill in the fridge and its a nice easy dessert. Hope that helps, Cheers Lyn.0
