I have two boxes of museli that I am not going to eat as cereal and thought someone here hopefully (fingers crossed) knows what I can make with it rather then chuck it out! Please help me...I hate throwing things out but BF will chuck it if I can't prove I'll use it in something - other then his mince to make it go further....

I like the sound of this one:-
Chewy Fruit Muesli Slice (makes 8)
1/2 cup dried apricots, chopped
1 eating apple, cored and grated
1 1/4 cups swiss style muesli
2/3 cup apple juice
1 tablespoon soft margarine
Preheat oven to 375 F. Place all the ingredients in a large bowl and mix well. Press the mixture into an 8 inch non stick cake pan and bake for 35 - 40 mins until lightly browned and firm. Mark the muesli slice into 8 wedges and allow to cool in the pan.
I have the recipe somewhere for crunchie meringue cookies that you bake in the oven overnight while it cools down. Will go find it for you.Our days are happier when we give people a bit of our heart rather than a piece of our mind.

Just use musli instead of the oats. If it is musli with fruit & nuts in you will have fruit & nut flapjacks - check the ingredients to see if it has added sugar - you may need to put a bit less sugar in the recipe.Your home is at risk if you do not keep up repayments on a mortgage or other loan secured on it.0 -
- 5oz / 100g margarine/butter
- 2oz / 100g brown sugar
- 2oz / 50g honey or syrup
- 4oz / 100g porridge oats
- 4oz / 100g muesli
2. Mix together the porridge oats and muesli, then pour over the melted margarine. Mix very thoroughly and spread into a 7"x 7" greased baking sheet.
3. Bake at 190°C/375°F/gas mark 5 for 20-25 minutes or until golden brown.

Crunchy Meringue Cookies (makes about 30)
2 egg whites
5 oz caster sugar
6 oz crunch (this can be anything from cereal, muesli broken biscuits, nuts)
Beat the egg whites with the sugar until really thick. Then fold in the crunchy bits. Line 3 baking sheets with foil and dot with teaspoonsful of the mix, leaving room for them to spread. Place the cookies in the oven before you turn it out after cooking your evening meal. Shut the door and turn off the heat and leave the cookies for at least 8 hours. DO NOT OPEN OVEN DOOR! In the morning yummy crunchy meringue and muesli cookies.
This recipe comes from my very worn out copy of Shirley Goodes "The Goode Kitchen" (the pink one) out of print now but you can pick them up from charity shops etc.Our days are happier when we give people a bit of our heart rather than a piece of our mind.

I mix muslie with oats & breadcrumbs to make crumble topping, healthier than adding straight sugar & tastes different every time!Post Natal Depression is the worst part of giving birth:p

i use cheapy museli for making crumbles and adding to muffins. i usually replace 1/3 the flour with museli and add a touch more liquid.
as mentioned before it's very nice in bread and you can add it into your bread machine on top of your normal flour but do remember to reduce the amount of normal flour you use and you may need to add a touch more water.
or you could make oatmeal cookies with it!
Absolutely Excellent Oatmeal Cookies
"These are chewy, healthy oatmeal cookies which can be prepared in a number of variations, just add nuts, raisins, chocolate chips, coconut, candied fruit or any other additions." Original recipe yield: 7 dozen.
INGREDIENTS:
1 cup shortening (use butter instead, it's nicer)
2 cups brown sugar
3 eggs
1 cup sour milk (add 1tablespoon vinegar to fresh milk)
1 teaspoon vanilla
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 cups rolled oats (use your museli here)
1 cup chopped walnuts
1 cup raisins
1 cup semisweet chocolate chips (optional)
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the shortening and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla and sour milk. Combine the flour, baking powder, baking soda, salt and cinnamon, gradually stir into the creamed mixture. Finally, stir in the rolled oats, and your choice of additions. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.founder of Frugal Genius UK (Yahoo Groups)0 -

i think ameretti biscuits would be gorgeous in this, think i'll make those for christmas! (well i'll have to taste test them a few dozen times between now and then methinks)
