How to use up bread

I bought some bread mid week which would be a generous amount for me for the week or so. On Friday I was given 3/4 of a loaf that was leftover after an event and today my neighbour who is off on hols for the week has just been round with a pint or so of milk and half a load of bread that was left that she doesn't want to throw out if it can be used.
I am now overrun with bread and have very little room in the freezer for it. Any great ideas on how to use it up, besides the obvious of "eat more sandwiches" and bread & butter pudding which I really don't like to eat! (Ideally nothing mega-fattening as I am trying to lose weight at the moment)

I was going to suggest bread pudding
Also if you 'breadcrumb' and freeze it, it would take up a bit less room in the freezer.
Breadcrumbs could be used to make burgers, or as a topping for things like cauliflower cheese etc.

Luckily we have a leftover bread thread which has loads of ideas

You could make summer pudding with it, you could make bread and butter pudding, you could make old fashioned bread pudding which can be a pudding or a cake, you could make stuffing to go with a roast and that freezes really well or you could make sandwiches and freeze them for when you have a picnic, Hope this helps Cheers Lyn.0

Mix breadcrumbs and cheese and sprinkle over veg as a topping. Brown under a grill or put in oven to crisp.0

As I said in my first post, I have hardly any room in the freezer, and I don't like bread & butter pudding!
I'm not sure about bread pudding - I'm trying to lose weight & that doesn't sound very diet friendly, but thanks for the reminder about summer pudding, I had completely forgotten about that & I think I could make a nice low fat one - I wonder where sells decent priced fruit to go into it? (but not strawberries, allergic to those!)0 -
Panzanella salad - lots of dif recipes if you google - yummy. The Italians have quite a few recipes for left over, slightly stale bread as much of their bread is made with little or no salt and so doesn't last. Bruschetta also makes a lovely lunch, light tea or supper if you start getting bored of sandwiches.0
