Hi All,
Does anybody have a recipe for mexican potatoes? We are having fajitas tonight and I have some potatoes to use up too:p:p

Not mexican but when we do sort of tex mex wedges.
Cut potatoes into wedges, boil for 7 mins, dry and coat in oil, bbq seasoning, salt and pepper, then bake at 180 for 20 mins. If you sprikle with sea salt before baking this is a nice flavour/texture.
If you didn't have bbq seasoning paprika would work, maybe chilli too?
If you are being healthy rather than coat in oil you can spray with fry light.0 -

I do mine on the george from raw OP and they are lovely and not greasy at all
