HM Carrot and coriander soup
HM Chicken soup from roast carcass
Risotto
Butternut squash in place of spuds
How are you with sweet potatoes?
You could boil and puree mixed veg like carrots, cabbage, broccolli and use that in a veggie lasagne (use that as a sauce with chunkier veg like peppers as fillers)0 -
Omelettes and frittatas tick the boxes too.
Also quiches and flans and plate pies (which are great for rustling up a dish of leftovers which are used as a pie filling;) ):A Every moment is a gift. That's why we call it the present.!:A

Two things
a - onion based veggie stir fry with 12p noodles [they take 3 mins to cook] - one of our regular snacky meals here
b - use beetroot instead of tomatoes in salads - it makes them look right - I do this all winter as I refuse to buy toms in the middle of winter.If you haven't got it - please don't flaunt it. TIA.0 -
Thank you so much for your replies everyone, some great ideas I did have a blank moment when i just couldn't think what to cook without tomatoes but the suggestions have jogged my memory again!
I'm going to batch-cook some of the suggested meals and freeze them in portions for me when the rest if the family are having something that i can't.

Country pie. Tried and purrrfected this weekend.
Good bag of mushrooms, button or tother. Onion, chopped, especially toe nail style.
Fry in pan, onion, with hint of garlic, till soft. Add mushrooms. When cooked, add a can of Campbell mushroom soup, rinse can with 2/3 water fill, add. Do not boil.
Peel good topping of tatties. Mash, add parsley, pepper, butter, milk, cheese, mustard as required.
Put mushroom mix in good sized bowl. Top with mash. Bake in oven at 200 c for twenty five minutes

You could try substituting butternut squash instead of tomatoes, for curries, shepherds pie, etc. Perhaps adding courgette to take away some of the sweetness, and paprika for flavour.
