low fat cakes for weight watchers coffee morning

I was wondering if anyone can help me.
Next wk in my weight watchers class we're having a coffee morning and have been asked to bring in some low calorie/fat cakes.
Has any one got any ideas please

Try www.oldchem.piczo.com and go to the cakes and bakes bit - its a rubbish looking website, I agree, but it is done by a woman that does the weightwatchers core plan and has loads of recipes on it - including a chocolate cake with no fat or sugar.
The second carrot cake recipe gets good reviews, but I haven't tried it (yet!)0 -
When I need to lose a few kg, I try not to eat *slimming* food just have smaller portions. I'd rather have a small piece of a lovely regular cake than a larger piece of one containing sweetener.
How about a tray bake, cut into small pieces?

here is a recipe:
SOFT APPLE PIE
Ingredients:
(for 6 servings)
3- 4 apples
5 heaped TBS flour (120 g)
1 TBS sugar
2 tsp baking powder
2 small eggs
120 cc skimmed milk
cinnamon
salt

Make a batter with flour egg yolks, sugar, salt, baking powder and milk.
Add the peeled and cubed apples and cinnamon, stir well and at the end add the egg whipped egg whites whites.
Put in a mold lined with baking paper (or sprayed with non-stick spray) and bake at 175° for 45 minutes.
You may substitute the apples with any other fruit and the milk with unsweetened fruit juice.
(Total points: 12,5 P, or 1 point per serving)

fatless sponge? weigh 2 eggs in their shells, then crack them, add an equal weight of sugar (will sweetener work? don't see why not, but I think you would use less of it) and whisk till frothy, add equal amount of self raising flour (ie to the weight of the shelled eggs), place in greased and lined tin, bake at 180-200 degrees depending on your oven, split in half and sandwich together with low sugar jam. Can also make apple cake by topping before baking with bits of cut up apple lightly pressed in (in this case do not split and sandwich etc). I suppose as no fat, it is quite low in calories, but kids like it too. You can also use the same mix to make those sponge flan cases if you have the right tin, and when cooked, fill with fruit. I did a chocolate one the other day (added cocoa powder instead of a little of the flour), and filled it with canned cherries. Yum!0
