vegetable and cheese rosti type things!!!

i've been browsing the web looking for a recipe for these but not found a lot.

me and dd ate in debenhams and i ordered her these vegetable and cheese things that were a bit like chicken nuggets, as in they were firm and she could dip them so she wolfed them down! they had sweetcorn in them because i could see that!!!

anyway i'd love to cook something like this up that i can freeze and give her as a snack when she gets in from nursery as i'd really like to get a lot more vegetables in her but presenting her with a plate of veg at 6:30 will only earn me a look of disdain and a request for a buscuit:eek:

she has her meals at nursery but a lot of the time it's crackers and sandwiches for tea. anything else anyone can suggest that i can freeze and just whack in the oven or grill for ten mins when i get home would be great:T

    Hello,

    If I was to make something like that I would use a potato base (so chop up and boil a large potato - drain, and mash). Then add sweetcorn, cheese, and anything else you want to. Form into shapes (might need to add an egg to bind if too dry, or some breadcrumbs if too wet).

    Then if you want it coated, dip in egg and breadcrumbs.. and grill or bake.

    My DD just tends to have dried or fresh fruit when she comes home from nursery, if I've been baking, she has a piece of cake or something as a treat. How about yoghurts?

    do you think this would freeze ok? it sounds good.
    she has petit filou yogurts and fruit as it is, but i'd like her to have more veg. and something like the above is a lot more filling than fruit.

    should freeze fine. A bit like mini veggie burgers.
