My dad worked in food analysis, and told me the above fact a long time ago. I believe the difference in weight is due to the reduction in water during the 'corning' process.

That's correct: it refers to 120g of Raw Beef per 100g of Cooked Beef on the actual tin.

ASDA.com says the country of origin in Brazil - the tin says "Produced in France", presumably from beef that originiates from Brazil? But that's where France comes in.

You're not wrong. I've just checked the tin of ASDA SP corned beef I've just bought. (Corned beef hash for dinner one night this week?) I suppose you can rear, salt and can beef in almost any country.

Also it has sugar as an ingredient on the website, but not on the label.
