Need help catering for a party

    When we've had folk round - we've had simple sandwiches made using value bread. Fillings include tuna mayo, cheese and onion and egg mayo. You could do these the night before. It took me @ 3/4 hour to do 3 big plate full ( & I mean FULL) for 6 hungry men and I wasn't particularly rushing.

    Hot dish - chilli as previously mentioned or curry. Pot of rice.

    Will you have any vegetarians - make sure that there is plenty meat free - can work out slightly cheaper as well! (E.g. sausage rolls and cheese rolls in same still)

    Bowls of crisps, samosas etc as others ahave mentioned.

    One wee word of advice though - during the event, keep an eye on the dirty dishes. 5mins here of doing dishes, 5 mins there of putting clean dishes away, 5 mins here of collecting dirty dishes and so on will help you (& other half) keep on top of things - EVEN if you are using disposable plates and cutlery where possible. This was a life saver during my husbands 40th.

    Nigella has an AMAZING maple coleslaw recipe that even kids will love.

    Rice salad - I cook and rice a pan of white or brown rice in cold water. Add finely chopped red onion, celery, red and yellow peppers, sweetcorn, cooked and cooled peas. Add some vinaigrette dressing (shop bought is fine) and top with some grilled or griddled halloumi. Fantastic veggie dish and gluten free (I think).

    6 items per person works out just about perfect in the lots to eat but not a lot of waste category.

    you are going to need approximately 500 items.

    I would do 100 mini rolls or sandwiches with assorted fillings. egg, tuna, cheese, ham, chicken mayo
    50 portions of things with dips. crudities, bread sticks etc.
    50 portions of salad things. I wouldn't go too mad just keep the ingredients separate - big bowls of tomatoes, cucumber, mixed leaves, spring onions, pepper, coleslaw, potato salad, beetroot.
    100 portions of hot food - chilli or curry
    100 portions of breads - garlic, pitta,
    100 portions of cold meats and deli on platters, e.g. bought in mini sausages, pork pie, quiche, salami, ham, samosa etc.

    Lot so dips - tomato sauce, mayo, mustard, garlic mayo, and some dipping oils, olives and pickles and you have a perfect buffet.

    I would get lots of ice cream and also wafers, cones and oysters shapes, as well as strawberry and chocolate sauce and have someone act as ice cream man with a big scoop.

    My parents made something similar, but also added sliced celery to it. The celery and orange go really well together and it's very refreshing.

    My extremely boring tip is to make sandwiches cut into triangles instead of topped rolls, for some reason they seem to look like more and last longer.

    Also don't be afraid to utilise packets of value savoury rice, value mayonnaise , chopped up value sausage rolls and scotch eggs.

    As others have said it's for one party only, the nutritional value can go out the window....and we all know if given the chance we'd love to gorge on rubbish without feeling guilty xx

    I do have a lovely recipe for potato salad if you want it....sometimes good to bulk out the value stuff with some quality xx
    I will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)
    Card #2 £6. I will not be skint at Chistmas this year!

    Very simple but very tasty, normally i hate shop bought potato salad but can eat this by the bucketful.

    boiled new potatoes (i'm sure vaule tinned ones for 20p would do the job)
    3-4 eggs boiled depending on how much you are making.
    A few chopped spring onions (3-4 bulbs and greens)
    5-6 finely chopped pickled gherkins (may sound yuk but makes all the difference)
    a scientific dollop of mayo (i prefer value to the well known brand)
    and a little scientific squirt of Frenches american mustard!

    Doesn't look much but believe me it's yummy x
