Non-Paying Employer, what to do?

Good afternoon,
People here seem pretty clued up, so I thought best to ask before I make a mistake.
My job hasn't paid me in around 2 months, this is starting to annoy me greatly as the Boss keeps pushing the date when I'm going to get paid back (it was meant to be today, not its going to be next week). So, let me run down some key points;
1) I have no contract with him. I do have records of all the text to and from about pay, recordings of him from work, photos of me in the office and at work, so I have some sort of evidence that I work there, but not for how long.
2) I know I need to write a letter requesting my payment next, should I ask for the amount based on with or without tax? Before this I was on Job Seekers so I don't earn much at all. So not sure if to ask for it with the tax taken off, or do I not need to pay tax?
Can anyone else offer advice? Really, I've got a vague idea of what I have to do (letter with date, then small claims somehow, no idea how you do that, guess I'll be down Citizens Advice again), so any advice would be wonderful.
