I make gingerbread men for my 19 month old, he loves them! Sometimes I cut them into ordianry circle shapes, the next time he gets a man shaped one his face lights up! I also make him jam tarts, sometimes with sultanas stirred into the jam, little cup cakes with dried fruit or nuts in etc.

You could try these!
Cheese Pretzels
1 sachet dried yeast
225ml warm water
12oz plain flour
1/2 tsp salt
5oz cheddar or gruyere cheese
2tbsp veg oil
1 tablespoon sesame seeds
Dissolve yeast in warm water. Sift flour and salt into a large bowl and stir in cheese, oil and yeast liquid. Bring together to form a dough and knead on floured surface for 10 mins by hand or for 5 minutes using dough hook (or use breadmaker on dough option?). Place in oiled bowl for about 1 hour. Break off small pieces of dough, roll into 25cm long strands and twist into pretzel shapes. Brush with oil and sprinkle with sesame seeds (care in case of nut allergies). Bake in oven preheated to 200c or gas 6 for 15 mins til golden brown.
Funny Shape Biscuits
2oz wholemeal flour
4oz plain white flour
3oz semolina
1/4 teaspoom each of ground ginger, cinnamon and salt
3oz marg or butter
1 med ripe banana
2tbsp maple syrup
1 egg, lightly beaten
cream cheese for spreading
a few raisins
Put all flours, semolina, ginger, cinnamon and salt into mixing bowl and rub in marg/butter. Mash banana well with maple syrup and stir into mixture to make smooth pliable dough.
Roll out onto lightly floured surface and cut into shapes with biscuit cutters. Brush with beaten egg and bake on lightly greased tray in oven preheated to 200c/gas 6 for 20mins til golden and firm. Cool on wire rack.
Spread cooled biscuits with cream cheese marking with a fork to represent animals fur...use pieces of raisin for eyes and noses.

cheesy pin wheels!
Make or buy your own pastry.
Roll out grate a small amount of cheese over it.
Roll up like a swiss roll and slice into pinwheels.
Bake in hot oven.
Also nice with chips and beans0
