Quick question about lemon curd

I'm making some lemon and poppyseed muffins for my sister's BBQ tomorrow and I've bought (I don't know how to make
) a jar of lemon curd with the hope of creating a hidden soft centre. Only trouble is I've never used lemon curd before so I don't know what the best way to do it is - whether to put it in before the muffin batter is baked or try to pipe it in whilst they're still hot (or when they've cooled?). I did chocolate ones this morning with ganache that I put in before baking but there was a bit of a hole in them when they were cooked about the gooey centre.

put in your blob of curd
and add the final 1/3 to cover

Agreed, works a treat with cup cakes too.I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off

I do exactly this with cupcakes and raspberry jam...works very well so I'd imagine it would be the same with curd0 -
I'm drooling!!!!
I'll merge this with baking quick questions later. You can also put in pieces of chocolate etc using the same methods. Mini creme eggs have an interesting explosion he he!!

Ohh, mini creme eggs, now that's something I must try! They've come out wonderfully (if a little too few as my mix only made 10 this time rather than the normal 14) and I'll definitely be doing it again!

Awesome. I've made banana and mars bar muffins, now they were good!!!! i just mixed it all in.A little nonsense now and then is relished by the wisest men :cool:
