what do I need 4 this to last 2 weeks?

Hi all,

We are in deep doo doo for two weeks due to an error made at my dh wages dept :mad: We basically are going to have to live on what we have in the cupboard and spend as little as possible on any items that we have to get. Therefore, my wonderful o/s could you please take a minute to look at what my freezer etc holds and see if you could work your magic to make this last?

We are a family of five big eaters :o

Marg
nat yoghurt (large)
garlic bread x 2
eggs x 12
mayo
cabbage
cherry toms and 2 toms
onion x 1
passata
whole chicken
sweetcorn
fish shapes
pork steaks x 5
chicken kiev x 3
naan bread x 3
ice cream :o
chicken fillets x 4
bacon
beef brisket (what's best for this? Went v. cheap in asda)
potato waffles
lots of frozen veg
cereals
cannellini beans x 2 (never eaten these before)
pasta sauce
tinned toms (loads of)
noodles
pineapple
pesto (green) x 2
dates
coconut milk
beans x 3
tuna x 1
jelly
herbs and spices etc

Would really appreciate help!

  • I think beef brisket is best cooked very slowly, maybe in a casserole, or pot roast sort of thing. That would be a good meal, slow cooked beef with lots of vegetables.

    You could make an easy chicken pasta with onion, a tin of tomatoes, veg of your choice and then a couple of blobs of pesto stirred in at the end. - serve with pasta or noodles.

    Your cannelini beans are quite soft and creamy beans - very tasty and handy to bulk out maybe your pasta sauce, stew or casserole.

    Will keep thinking - hope this gives you a couple of ideas at least.

    You could do a big chicken curry with your chicken fillets, natural yog, some veg and naan bread-yumm
    we often have weeks like yours and I'm always amazed at how little we need to spend to eat-actually it horrifies me how much I spend when I have money !

    Have you got flour so you could make pastry for pies, flans, pancakes pizza etc.

    (4)Left over chicken (meal 1) make into curry with cocunut milk and green pesto & nan bread
    (5)Pork steak, baked spuds & veg
    (6)HM Chicken Pie, spuds and veg
    (7)Roast Beef dinner
    (8)Egg, waffles, bacon and beans
    (9)Kievs, spuds and veg
    (10)Sweet & Sour Veg & rice
    (11)Baked spuds with tuna mayo and sweetcorn
    (12)Veggie chilli & Rice
    (13)Cheesie Spud Pie & Beans
    (14)Whatevers left?

    I think you will should only need spuds, rice, milk, flour and cheese to get by on that.

    Marg Get bread, cheap cheese and cold meat (corned beef etc) to have sandwiches for lunches.
    nat yoghurt (large) serve with fruit
    garlic bread x 2 serve with pasta
    eggs x 12 Boiled egg and mayo sandwiches
    mayo
    cabbage use with the bacon in this gallete.
    cherry toms and 2 toms Bake with some olive oil and have with gallete.
    onion x 1 have in casserole
    passata
    whole chicken Get potatoes, have with frozen veg, use leftovers in currysweetcorn use with tuna in pasta salad
    fish shapes have with waffles and frozen veg
    pork steaks x 5 have with chips and frozen veg
    chicken kiev x 3 with mash and frozen veg
    naan bread x 3 have with chicken curry
    ice cream get some fruit and have with that
    chicken fillets x 4 get salad and have sliced over it with crusty bread
    bacon have in the gallete
    beef brisket (what's best for this? Went v. cheap in asda) casserole with root vegpotato waffles (have with fish shapes)
    lots of frozen veg
    cereals - make the most of these. Fill up by adding raisins or sultanas or banana
    cannellini beans x 2 (never eaten these before) add to pasta with the ready sauce (one tin) fry onion, garlic and mushrooms, add beans, have with passata and pasta
    pasta sauce (have with cannellini beans)
    tinned toms (loads of) use in casserole, on pasta or in curry
    noodles - stir fry? (will need other ingredients)
    pineapple nice with icecream
    pesto (green) x 2 mix with olive oil and drizzle over chicken salad; with pasta and veg
    dates for snacking
    coconut milk add to chicken curry
    beans x 3 nothing shabby about beans on toast!
    tuna x 1 (pasta bake)
    jelly
    herbs and spices etc
    May all your dots fall silently to the ground.
