Ideas for curry paste please?

Hi all, I have just received my approved foods order and with it I had ordered a case of 12 packs of Thai red curry paste for 1p

Does anyone have any ideas of things to cook other than curry, I have searched but not found much. I was thinking of mixing with yoghurt for a marinade for chicken wings or drumsticks but that is far as I have got ;)

    I've got a load of this too and find it makes a really nice stir fry sauce. I also use it for my favourite noodle dish, which is basically whatever veg and meat / fish I have, stirfried in a pan with the Thai sauce, then add water or veg stock and some rice noodles and cook until the noodles are soft and the liquid has reduced down to a sauce. Serve in a bowl with a squeeze of lemon juice and some chopped nuts or seeds if I've got any.

    (I'm currently writing my meal plan for next week, so thanks for reminding me of that!)

    I use it to mix with minced fish, chicken or pork for Thai fish/meatcakes. Add some ginger, spring onion, chopped fine beans.

    Also, I use Indian curry pastes to mix into mashed potato for little spiced patties, that would work too.

    I like curry paste to make creamy dips: just stir into your fave mild dressing (I use a mix of soya yog and light salad cream).

    Mix as for the dip but use as a spicy dressing for crunchy green salads or pasta salads.

    Mix as for the dip but use as an interesting spread for sarnies instead of mayo/butter.

    Mix with peanut butter and a little water to make it loose enough to dress noodles and veg, a stir fry or to use as a satay-type dip.

    An easy curry is made by mixing with creamed coconut, tin of chick peas and frozen veg and simmer for a few minutes. You can use a tin of tomatoes or passata instead of or as well as the coconut if using red curry paste.

    Whisk a spoonful or two into a omelette mix to serve with stir fried vegetables.

    Mix into a batter for sweetcorn fritters.
