I do mine in the microwave too & sometimes rather than water I use lemonade or ginger beer. Must try it 'oldtractor' style with the strawberry jelly!
But if I'm making a crumble I don't precook it & rather than custard or ice-cream, I think the best thing to go with it is Greek yoghurt - sublime!0 -
You can cook it in orange juice too.
Also, it doesn't need to be eaten as a desert, it goes very well with oily fish like mackerel. Here's a Nigel Slater recipe for mackerel and roasted rhubarb.0 -

:rotfl: Yes it is a bit tart, i haven't sweetened it yet, its in the pan which is in the fridge. I think that i will tip it into a container and freeze it until i've decided properly what i shall do with it.
Methinx even though i've already cooked it it should still make good jam once i've got some ginger and either jam sugar or pectin *drools*

You won't need jam sugar or pectin to make rhubarb and ginger jam: the rhubarb has plenty of pectin in it already. Just use ordinary cheap granulated sugar.

You should try adding some ground cloves to the compote or when making jam.They really compliment each other.0

This thread takes me back to my childhood. My parents weren't gardeners by any means but we had rhubarb at the bottom of the garden and I was often sent out to pick it -the more you picked it the more it grew.I Would Rather Climb A Mountain Than Crawl Into A Hole
