Defrosting/Cooking/Freezing Chicken

Hi everyone, I've started batch cooking as my OH has started night shifts and the only way I'll cook a decent meal for myself when he's at work is if I do a batch of it, knowing he can take a portion to work for his dinner the next night. The plan is to get ahead of myself and have some back ups in the freezer for those nights when I can't be bothered.
So my question, please, is this:
If I've bought fresh chicken breasts (or any meat for that matter) and frozen them, I want to be able to de-frost them and cook a dinner with them. Then I want to be able to freeze the new dinner.
Is this okay for me to do, because obviously then I'd be de-frosting the new dinner and re-heating it.
Sorry if this is a silly question but I don't want to be the cause of causing food poisioning. Thank you!

It will be fine
This is how all those those Thailand battery raised chickens arrive & are used in ready meals
Once you made process, like cooking, it is fine & safe to go to another process, like freezingGardener’s pest is chef’s escargot0 -
As long as you cook the chicken thoroughly then you kill any bacteria present. Then it is fine to refreeze. What is not OK is to thaw and refreeze without cooking as this allows the bacteria to multiply.0

Hi, Yes its quite alright to do this. At the moment we have a lot of chicken salads. I cook a whole chicken and portion this up. Then defrost in the fridge - take out at tea time on Saturday for Sunday tea time for instance. We then have it cold with salad. It dosn't need to be re-heated.
In the winter we do the same, just re-heat in gravy, 30 minutes at gas mark 6 works for me.0 -
