Wedding catering refund - no contract

We have recently had to cancel our wedding, and I'm trying to recoop various deposits that we paid, and most suppliers have either refunded whole or part deposits. I'm having particular difficulties with the caterers - we paid her a deposit for the food but she refuses to return it in whole, or in part, even though we have not signed a contract. She keeps saying that we entered into a verbal contract, but if I had known this at the time of paying the deposit, I would have demanded something in writing, which was never received. Then I would have known that it was non refundable.
