making a pilaf type thing, how much rice?

Hi,
I am planning on making a spicy pilaf for dinner. I have 1l of spiced chicken stock (from when I made Jamie Oliver's empire roast chicken) How much rice do I need? I will be frying onion in spices, adding some tomatoes, the rice and then the stock and baking in the oven. Will also put some frozen spinach and peas in there nearer the end
Any ideas? Thanks

The average rule-of-thumb is abut double the volume of liquid to rice, so I've just measured half a litre of rice and it comes out to about 14 ounces.0

BOILED RICE
Per Person
INGREDIENTS
75g (approx. 100ml by volume) of rice
¼ of a teaspoon of salt
200ml of water
METHOD
Check the cooking time on the packet.
Put the rice, salt and water into a saucepan on a medium heat. Bring to the boil. Stir once to stop it sticking to the bottom. Turn down the heat until it is just boiling (simmering). Put the lid on the pan. Cook until the water is absorbed.
DO NOT STIR!
Take the pan off the heat and let it stand for a couple of minutes. Fluff it up with a fork to separate the grains and serve.
TIPS
Basmati is the best all purpose rice. It cooks quickly, it is more fragrant (it’s Hindi for fragrant) than long grain and it also holds together during cooking.

Hlaf by volume - 500ml or 2 cups. i always measure rice by volume rather thna weight.

I wasn't sure on the volume, whether it would be the same as for plain boiled rice (I never make boiled rice on the stove by the absorption method your recipe is for Stephen) but it looks like it is
I use about 1:4 for risotto, and 1:1.5 for plain rice in the rice cooker, or boil plain rice on the hob in LOTS of water and drain after. So it looks like the general consensus is 1:2 for thisWill do that then
Am looking forward to it-seem very hungry today! Which is good, as 2 cups of rice will make LOADS of pilaf! (plus we have some dhal type thing as wellyum)

Just for interest, how I was taught to make basmati by indian friend...
Approximately 1 mug of uncooked basmati rice per 2 people.
Wash rice in plenty of water till it runs clear (ridding it of excess starch means you get the lovely individual grains)
Soak rice in water for at least half an hour.
Rinse again.
The ratio should be 1 1/2 cups of water to each cup of rice.
Bring rice to boil, immediately cover, switch off the burner, and leave to steam for 12 mins, don't be tempted to lift the lid!!
Once time is up remove lid and fluff up the grains with a fork - rice is done.No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!0
