Advice for keeping salad bar fresh?

I'm trying to encourage everyone at home to eat more salad, but DH hates cucumber and DS1 can't eat tomatoes. I've decided to do a "salad bar" at home and have separate containers of cucumber, tomatoes, onion, peppers and grated carrot; so people can mix their own!
I honestly don't think I could be bothered to prepare it all every evening, so what i'm wondering is how long will these keep in the fridge if they are already sliced/grated?

A few hours and then they will go wilty.
Couple of days before they start fermenting.A kind word lasts a minute, a skelped erse is sair for a day.0 -
I make up a big bowl of mixed salad items that gets used over a few days...if its in individual pots you'll find some things last longer than others....carrots and lettuce will brown quickly but most other bits will last a few days."Start every day off with a smile and get it over with" - W.
