Recipe advice- urgent

Hi. I have some friend coming tonight for a meal. But at the moment I lack ideas. I have 2 whole 4LB fresh chickens to play with....

What do you recon?

    I made a great chicken dish from a recipe at Waitrose last week - Spiced chicken with mango chutney in yogurt....
    you'll get tons of ideas, I'm sure - enjoy tonight!!

    What sort of thing do you want to make - posh? relaxed? easy? Do you want to cook the chickens whole, or joint them?

    One thing I have made for friends is chicken with 40 cloves of garlic, I used the Delia recipe (which actually uses 30 cloves :laugh: ) http://www.deliaonline.com/recipes/chicken-baked-with-30-cloves-of-garlic,1566,RC.html. Very tasty if you like garlic and a good talking point for your guests.

    Goes nicely with fairly plain roast veggies and some rice or spuds to soak up all the garlicky-winey juices.

  • Spanish chicken........bung it all in and have a lovely relaxed meal

    chicken pieces
    jar of passata sauce
    choped onions
    black olives
    mushrooms
    mixed herbs......rosemary, marjoram, basil etc
    salt and pepper
    peppers

    Place all in a casserole dish, cover with extra water if needed and cook for a couple of hours, serve with veg or cous cous......yummy!!:T

    I'd joint the chickens and make coq au vin. It works well for posh or casual. Delia's recipe is good.

  • Portuguese chicken, not sure how Portuguese it is but it only takes 45 mins & you can prepare chicken & sauce in advance in you want.

    Take the backbone out of the chicken & flatten out
    Sauce/marinade
    110ml lemon juice
    1 tablespoon paprika
    2 teaspoons oregano
    2 teasponns salt
    1 tablespoon brown sugar
    2 tablespoons olive oil
    3/4 teaspoons sambal oelek or chilli

    Preheat oven to 220c , put the chicken skin side up in a sturdy roasting tin mix up sauce ingredients & pour over chicken. Cook uncover for 45 mins basting every 15 mins.

    Its good with salad, rice, wedges, chips.......
