Hi,
My OH works in a college that runs butchery courses, as a result he gets to buy good cuts of meat at really good prices as its the meat that the students practice on.
The other day he got a 1.6kilo beef roasting joint. I have cut it in to four and frozen it, however, Im not really sure what to do with it, any ideas please? it's only me & OH that will be eating as our LO isnt old enough yet for solids, so I dont want it going to waste, and wouldn't mind left overs doing OH's work lunches.

I should note, that although I am a reasonable cook, I am short on time during the day looking after our baby, so would appreciate ideas that are quick and simple to prepare.0

i would roast it, will do a roast dinner, sandwichs and can be frozen in slices then reheated and covered in gravy, if your short of time do you have a slowcooker?DEC GC £463.67/£450

I would never put a good roasting-joint in the slow-cooker. It seems like a terrible waste of good, lean meat to me. For a busy Mum what could be easier than just popping it in the oven? You can nip back once or twice to baste it or just leave it be.
You could ring the changes by using different mixes of herbs and spices for a rub, or just smear some wholegrain mustard or even horseradish on it before roasting.0 -
I agree with BitterAndTwisted - pop it in the oven, baste occasionally and enjoy roast meat
Any leftover slices - they can be used to make shepherd's pie, or just cover them in gravy and freeze for another roast another day in a fraction of the time.

I agree too, roast. But next time, cut down the joint in to more than one before freezing. I buy 30k ish of beef at a time when a cow is butchered, and get huge joints which we would never eat, so i un bag them, cut them down further then freeze.0
