Is there any mechanism to match holders of tickets who would rather have a different event?

There is http://www.swap-olympic-tickets.com/ which does everything at face value but you have to pay a fee (less than £10) to get in touch with people. It doesn't seem very popular to me with very few tickets available but that may increase in time.0

Another much more productive route is to on Twitter and search for #2012Tweeps - HUGE group of very active Olympic Tickets hunters. All sort of swapping and stuff going on. But no profit or touting of course.0
