easy but nice cupcake receipe wanted

could someone share with me please, look on internet but theres 100s. can someone please past me one on that they've tried, thanks.

    this is mine , they always turn out nice

    8oz butter
    8oz castor sugar
    couple of drops of vanilla extract
    4 eggs
    7oz self raising flour
    1oz corn flour
    splash of milk

    cream butter and sugar until fluffly then add vanilla, beat the eggs in one at a time and then fold the flour in gently, then stir in the milk

    cook on gas mark 5 for about 15-20 mins or until golden

    This is th one I always use now as it's a doddle. Has a lovely favour and can easily swap vanilla extract for lemon or other flavourings. They always bake really really well. I've just done 216 often for the jubilee and every one of them was perfect and tasted lovely.

    For butter icing I just do 2x icing sugar to butter so normally half a pack of butter and 250g of icing sugar with a splash of vanilla extract.
  • Here is the recipe I use, (passed on by my mum)

    4oz SF flour
    4oz Caster sugar
    4oz marg/butter
    2 eggs

    Beat the sugar and butter together until fluffy, beat in the eggs, then fold in the flour

    Easy to make into choc chip, chocolate or any other flavour cakes!

    I use exactly the same one as little miss sunshine and it never fails. Bake for 15-20mins at gas mark 6 ish.
