Can I freeze this mixture?

Am looking at cutting out wheat and dairy from my diet for health reasons. I have made a cookie mixture from a recipe which consisits of chopped dates, walnuts, oats, mashed banana, olive oil and vanilla essesnce. I have baked some, do you think I can freeze the rest of the raw cookie mixture to cook another time?

    Why not try freezing some of the baked mixture and some of the unbaked mixture and see which one is best when its defrosted.

    So you know for next time.
