Working Different Amounts of Hours

My partner has just started a new job and has a contract of a minimum 20 hours per week.
She has been told that she will be working 30 to 40 hours a week though.
We are wanting to get a joint mortgage so will the lender only take into consideration her 20 hours per week although she will be working sometimes double that?

Initially they will just accept contract, once she has worked the hours for 3 months there are some lenders that will consider the actual hours.
It will not be at 100% inclusion mind you..
