Pork joint like a brick - any ideas for rescue?

Hi, I picked up a small whoopsied pork joint from the hot meat counter at Mr M, but when I took it out of the bag it is is as hard as a rock lol. Not wanting to throw it away I thought if there is any way to rescue it the good folks on this forum are the ones who would know!
My plan for now is to pop it in the freezer but when I get it out to cook, I have the option of the slow cooker or pressure cooker. I was thinking of just using some stock and hopefuly soften it up enough to eat. I am thinking maybe some sort of pulled pork? Has anyone done this and could recommend which way to go, sc or pc?

I think I would be tempted to mince it and then use in things like spag bol, rissoles, cottage pie etc. Or could you slice some thinly and freeze it in gravy ready for a quick meal?;)Weight loss - here we go again - watch this space!
