Vietnamese Food - Recipes and food from Vietnam - the new Thai? :)

Following the recent thread on Thai food, I have always been keen on the idea (ingredients, flavours) of Vietnamese food but have never really tried it. Lots of Thai restaurants in Edinburgh but no Vietnamese ones....

Anyway, I made a recipe last night from Exploring Taste and Flavour by Tom Kime (Vietnamese Pork with aubergines, lime, chilli, ginger and coriander). Wow!! What a flavour combination, really, really good!

Anyhow, that's not a book on Vietnamese cookery specifically so does anyone have any tried and tested Vietnamese recipes or perhaps a good cookbook to recommend?

    Yes you are right, we don't have many Vietnamese restaurant nor cookbook.

    Vietnamese noodles in soup tastes wonderful! The best Vietnamese food that I have tried was in Paris.

  • malamala - was that "Pho"? (sort of pronounced "fur" with an extended and raised "ur" sound) - white rice noodles in a clear brothy soup. Typically served with beef or chicken.

    My favourite Vietnamese food is Spring Rolls - which are different from Chinese/Thai versions.

    Mainly because a translucent rice paper wrapper is used rather than the heavier flour based ones typically seen. Much crispier and thus far superior when fried IMO. Or it can be eaten cold if the rice paper is softened in water with the filling wrapped inside for "Summer Roll" version.

    I live in a bit of London which has a sizable Vietnamese community and their nosh has been a revelation - crab spring rolls, noodle soups with sliced steak, salad with dressed with citrus... I think it's time for my morning apple...

    I adore Vietnamese food! Never tried cooking any, but things like pho and summer rolls are wonderful. Any OS'ers in London should visit one of the Vietnamese restaurants on the Kingsland Road/Old Street-so good and so cheap! Some good looking recipes on this site: http://www.saigoncooking.com/

    liz545 - thanks for the link. Went to Vietnam about 6 years ago and loved the food - so think time calls to try and cook some if it again. Spring rolls there were fantastic... and pho was amazing!

    Hi,

    Don't know if its still around but Hanoi on Gilmore Place in Edinburgh was a vietnamese restaurant. Friends of mine ate there and said it was good.

    As for recipes, I always find https://www.uktvfood.co.uk worth a look for anything less usual. You can search by cuisine.

    hi randomtask, I don't know a lot about Vietnamese food, so I don't know their names. But I love the noodle soup and their fish sauce which is very light and refreshing!

    Have bought those rice paper from a Chinese supermarket and made some wrappings last year, delicious. Thanks for reminding me as I really fancy one now.
