Best deep frying thermometer?

Basically, as the title says, I've been finding it hard to get the right temperature in the chip pan. Using different volumes of oil and sized gas burners at different times makes it hard to judge just how long before I'm ready to fry. So, I hope a thermometer will solve it, but which one to get? A lot of them look fiddly to read and I can't really get my face too close to it when it's in the chip pan! Any suggestions would be much appreciated?
