Quick and easy meals for 2 for a self catering break for a week under £30

So me and OH are going away on holiday for a week self catering to a caravan. Looking for meal ideas that are quick and easy. I am lactose intolerant so needs to work around that and OH is a fussy one. I really can't think of anything that interesting.

Knock up some salads for the fridge - then drag those out every day and get a cheap BarBQ and do sausages/burgers/jacket potatoes on the Barbie every day.0

We like picnic-type stuff on hols: some nice bread and things like olives and tomatoes and veggie Frankfurters, crisps. That sort of thing. Other meals like pasta in a tomato sauce (we would buy a jar on holiday tbh) or veggies in a jar of nice curry sauce with bought flatbreads. Couscous with a tin of mixed bean salad stirred in is a lovely quick meal for warm evenings.Love and compassion to all x0

I am not too sure about lactose intolerance, but here are some suggestions:
Hot dogs. Me and my OH love these as a treat. Lots of onion, hot dogs in a jar from Lidl and some finger bread rolls, although sliced bread would work if need be. Some tomato ketchup, mustard or my favourite is burger relish.
Stir fry - also quick and easy. I use a packet sauce, which is 50P, and love to use prawns and a tin of stir fry veggies and some fresh, like peppers and courgettes. Could use half a packet of prawns and the rest for sandwiches.
Pasta with pesto - another of our standbys but be careful as it does contain a small amount of cheese, so check the ingredients.
Like the barbie idea as that sometimes gets reluctant male cooks doing most of the work.0 -
Does the lactose intolerance extent to proper feta (goats and sheep's cheese)?
Pasta. Grill/fry some bacon crispy and snip into bits. Add some crushed black pepper. As soon as the pasta is drained, add one beaten egg, mix in (it scrambles in the heat) and then add the hot bacon, fat and peper, stir together.
Enhanced potato salads
new potatoes. Chopped into halves or quarters depending on size.
Add chunks of hotdog or sausage, chopped onion and gherkin. Good way of making the rest of the hotdogs do something if you have them in rolls the previous day.
Or onion, tomato and feta (and olives if you like them).
Or one fillet smoked mackerel with gherkins or tomatoes or olives.
Oh and do some safe soups as they can bulk up a salad or make a meal with sandwiches or bread and things?If you've have not made a mistake, you've made nothing0 -
And the one I intended to start with but forgot, frittata or spanish omelette. I am thinking of par boiled or left over potatoes and some pine nuts and maybe some tomatoes or broccoli, but you can keep the bits of that that sound good to you and replace anything as you see fit/ to suit OH.
Also, do you like pot noodle? I love one occassionally and that can be good if you are hungry the end of the evening and likely to be tempted by takeaways.0 -
Veggie chilli with pasta and /or rice.
2 tins chopped toms 1 tin chick peas 1 tin red kidney beans 1 tin baked beans add herbs garlic chilli to taste. Really cheap and keeps a few days in the fridge.0 -
Some excellent suggestions am going to run them past OH this weekend so keep 'em coming.
I REALLY fancy hotdogs now! Think I might need to pop down the shop!
I can eat the lactofree range and love soya products so I can sub things easily.
I was thinking of going towards BBQ food as I could cook in oven because weather forecast isn't looking good!0
