What cakes can I make?

I am involved in a jubilee bash for Monday and need to make cakes, ordinarily, this would not be much of a problem, but I have ended up committing myself to so much over Saturday and Sunday that the only free time I have to bake will be Saturday evening.

Now, while I don't actually eat that much cake, when I do, I like it to be very fresh, so what could I make that would be still happily fresh on Monday, especially in this weather?

    tea loaf, brownies, banana cake, carrot cake, lemon drizzle, apple cake, parkin, macaroons.

    If you keep them in a tin after they've cooled I can't think of any cakes that would be stale in less than two days. Not that I've been able to keep any cakes for longer than two days once made here.....

    I'm fond of a basic madeira mixture as it's nice and moist. I'd stay away from any mixtures that are fat-less just in case.

    Good advice above--fat will definitely help the cake to last longer. You might also consider cakes (such as the lemon suggested above) that have a sugary coating on the outside. Anything with a glaze, icing or frosting will help to keep the cake itself from drying out. However, you may want to avoid any icings or frostings made with butter (such as butter cream) which will go rancid faster at a higher temperature. If you're pressed for time, I would suggest cakes that can be covered in nutella, peanut butter, lemon curd etc. Brownies are also an excellent suggestion as (if covered tightly) they'll generally stay soft for several days. I too loathe a stale cake and have been known to turn down the offer of one in a cafe because it looked like it wasn't fresh!
  • Thanks for the suggestions, didn't think of brownies as I couldn't get my head beyond madeira/victoria mixes. What is parkin?

    parkin is a ginger, golden syrup/treacle, brown sugar cake. sticky and quite dense, sweet and tasty. google it, there are plenty of recipes.

    If you want sponge cakes i would go for a genoise sponge, i find these last better, but madeira would too, in fact, i might make a madeira for us, i had not thought of it. But i also agree that getting the cakes iced will help keep them fresh.

    Imo brownies improve in the tin for a couple of days. I have in the past made a brownie cake, (i.e. brownie mix in round tins, then layered and iced). It was lethally rich and a sliver went a very long way, very decadent....may be worth considering if you are for some reason not wanting a traybake style cake.
