Hi there.
I recently had to move my dd from school dinners to packed lunches because I can't afford the £45 a month
In her lunch box she currently had a main (sarnie, roll, bagel, pasta)
A yoghurt, piece of fruit and a treat. I normally buy whatever is on offer in the sm like a multipack of mini party rings or mr Kipling slices.
Could I make some sort of small cakes and keep them in the freezer so she could have one everyday? Would this work our cheaper?

Hi Louise
Yes homebaking is definitely cheaper than shopbought and you can definitely freeze cakes, I always intend to freeze some whenever I do a batch of muffins or fairycakes, so they won't all get eaten at once - but they tend to disappear before I can bag them up!!
Just get them out of the freezer the night before to defrost... also very nice microwaved for 30 secs or so for that 'just out of the oven' warmth - mmm!
Hope that helps!Pax Et Bonum0 -
All our bread and rolls are frozen and we make lunches the night before so I'll definitely get them out the night before.
I was also wondering if icing is ok frozen?
I may attempt some banana muffins this week0 -
as an idea, you can often freeze cookie mixture and cook from frozen. great if you're cooking the dinner the night before and can put a few in for the next day.Opinion on everything, knowledge of nothing.0

I find icing goes either sticky/slimy or just too runny after being frozen (depending on the icing!)
But melted chocolate used as a topping seems to fare a little betterand is perfect on flapjacks!

Banana bread/loaf is fine frozen. Slice and freeze in foil individually and take out the night before you need it.MFW 2019#24 £9474.89/£11000 MFW 2018#24 £23025.41/£15000

Most muffins also freeze well, as do cupcakes (un-iced).0

The sponge part of Victoria Sponge freezes very well. What I've done before it to make the two sponge parts then cut both in half, so you have to half circles sandwiches.
Put one half in the freezer for future use. Then put jam between one half and eat that.
Then take the other half out of the freezer and spread jam between to use the other half.0
