Hello all!
I have recently discovered that where I currently live pumpkin is just about the most MSE thing you can eat - a big, tasty one is only about a quid, and lasts ages. They are the green, ribbed types not the orange Halloween ones.
I've just made some fantastic pumpkin soup, but am looking for ideas on what to do with the rest. I don't really like pumpkin in curries, and am not crazy about it in Risotto. Just having it steamed or roasted on its own gets a bit old, though is obviously very healthy.
I'll roast, boil and blend it for use in muffins etc, but would love ideas for more savoury main courses.
Unfortunately, its neigh impossible to get decent cheese or pre-prepared pastry where I live, but spices and herbs are very easy to come by.
