Written representations - don't bother. This is usually a barrister's skeleton argument but seeing as you don't have a barrister and don't understand what they are asking for, anything you submit may well only serve to confuse the issue.
Witness Statement - if asked to read your statement, you just read out your statement. Tribunals don't always require you to read out the statement, but if they do, you simply read it out. They may ask you to stop where you refer to documents in the bundle so they can read the document, but then you can continue. At the end, the Respodnent's representative will cross examine you and the Tribunal may have questions for you as well.
Presumably you have a date for exchanging statements with the respondent? This is your witness statement which should set out events in chronological order, referring to relevant documents by page number in the bundle.0
