casserole help needed!

Suddenly I have an extra mouth to fee this evening. I have defrosted some lamb casserole but it was a bit sparse on meat anyway and stretching it to 3 means there will be very little meat each. I can do heaps of extra veg and potato but is there anyway I can disguise the lack of meat without it being obvious that we are eating a big plate of vegetables?

My ideas so far are....do some yorkshire puddings or dumplings to go with it (not sure how to make dumplings though) or is there something I could add to make the casserole seem more meaty? Any other non-vegetable accompaniments I could do? Do you think a big pudding would help?

    Depending on the contents of your cupboards and fridge, I would bulk up the casserole itself with mushrooms as a first choice. I'd gently saute them in a dab of butter with garlic first for extra flavour. I also like dried apricots in casseroles, and they would bulk it out a bit. Failing that, a big pudding like you say and/or a little starter with toast on the side, maybe a simple soup!

  • I always add a tin of baked beans to a stew to pad out further. Frozen/tined veg etc?

    Thanks for your help. I didnt have any beans but had some mushrooms so added those and then put all the other veg in with extra stock. Served up in pasta dishes as it was quite liquidy and had with some part-baked baguettes from the cupboard. Big sponge and custard pudding. Everyone felt stuffed!
