Egg recipes to freeze

Help - found myself with a dozen large eggs out of date emmm..... 2 days ago.

Am looking for a spanish omelettey type thingy but all recipes I've seen say not to freeze?

I don't like puddings and am trying to stay off pastry so quiche out (however, if you can freeze quiche would have thought you could freeze omelette?

What about scrambled egg - can this be frozen?

I can't help with recipes but would say don't pay too much attention to the dates on eggs.

If you put them in a bowl of cold water (I use the washing up bowl) and they stay on the bottom they are fine to use. If they float to the top, then throw them away.

I have had eggs a week or so out of date and never had one float to the top.
