Jam sandwich biscuits?

Anyone got a recipe for jam sandwich biscuits?
Do I bake the biscuits seperately, then add the jam and sandwich OR do I layer biscuit, jam, biscuit then bake?
My 4 year old wants to buy them from the school tuck shop (not at 30p a biscuit!!) and as far as I can work out from his description, they are a tray bake of some description; as he says 'rectangle with jam in the middle'.
Any suggestions gratefully received!!

    225g unsalted butter diced
    100g caster sugar
    200g plain flour
    100g ground almonds
    150g raspberry jam
    icing sugar to dust.

    1) put butter, sugar, flour almons in mixing bowl, mix and knead into a ball
    and put in fridge for several hours

    2) Remove from fridge roll out pastry one third at a time to 5mm thick
    Using fluted cutter cut out even number of shapes and put half on greased baking tray.

    3) cut middle out of the the rest of the cookies and put on baking sheet.

    Place in oven at 140c GM1 for 30 mins.

    4) Remove the cookies from oven and transfer to cooling rack.

    Allow to cool completely.

    5) place blob of jam on bottom halves of cookies and put on top halves.

    Sieve some icing sugar over top.
