help will my lamb defrost in time??

A meat thermometer is very useful for making sure that meat is cooked to a safe temperature - also will tell you when your beef is medium rare or however you like it and when your chicken or pork is cooked right through (there is a chart of temperatures for different meats). The one I have is a probe which you stick in not specifically a meat one but you can get some you put in the meat when you start cooking and then a thin wire leads out of the oven and an alarm goes off when the meat is cooked!

Are you talking about mince? Yes, with mince you can ensure it is heated all the way through, although personally I would not like to take the risk. Leg of lamb, no.Context is all.

You could defrost part way using a microwave if you have one. Give it twenty minute bursts and then let it rest for twenty.

thanks for the advice guys, in the end I played it safe and cooked fresh pork chops! I'll save the leg of lamb for another week and I think to be sure I'll defrost it first anyhow.

Are you sure? Ive cooked leg of lamb from frozen before with no ill effects. Ive just got a lamb joint out of the freezer to look. Its a Waitrose one and states its ok to cook from frozen

Thanks for the info, PP. I assume that it is from frozen and not part-thawed, also that it has a much longer cooking time than cooking from unfrozen?Context is all.
